Ingredients:

For the القطايف (qatayef):

  • 1/4 teaspoon salt
  • 1 cup water
  • 1/4 cup milk
  • 1 tablespoon sugar

For the cream filling:

  •  
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 tablespoon rose water or orange blossom water

For the syrup:

  •  
  • 1 cup sugar
  • 1 cup water
  • 1 tablespoon lemon juice

Instructions:

  2. To make the القطايف (qatayef), whisk together the flour, baking powder, and salt in a large bowl.
  3. In a separate bowl, whisk together the water, milk, and sugar.
  4. Add the wet ingredients to the dry ingredients and whisk until smooth.
  5. Heat a non-stick skillet over medium heat.
  6. Pour 1/4 cup of batter into the skillet for each القطايف (qatayef).
  7. Cook for 1-2 minutes per side, or until golden brown.
  8. Repeat steps 5-6 until all of the batter has been used.

To make the cream filling:

  1.  
  2. In a medium saucepan, whisk together the milk, sugar, and cornstarch.
  3. Cook over medium heat, stirring constantly, until the mixture thickens.
  4. Remove from heat and stir in the rose water or orange blossom water.

To make the syrup:

  1.  
  2. In a small saucepan, combine the sugar, water, and lemon juice.
  3. Bring to a boil over medium heat, stirring occasionally.
  4. Reduce heat to low and simmer for 5 minutes.

To assemble the qatayef halwani:

  1.  
  2. Place a القطايف (qatayef) on a plate.
  3. Spread some of the cream filling on top of the القطايف (qatayef).
  4. Fold the القطايف (qatayef) in half.
  5. Repeat steps 1-3 with the remaining القطايف (qatayef) and cream filling.
  6. Pour the syrup over the القطايف (qatayef).
  7. Serve immediately.
